There’s a trick to making potato pizza. The trick is to make much more dough and cook more potatoes than you need. Basically, you double the recipe so that you can eat potato pizza for four consecutive days. On day two you eat the leftovers from day one’s batch. I mean, who doesn’t love leftover pizza? Then it’s day three and since you can’t let the extra dough and potatoes go to waste, you make a brand new tray of pizza. Then, well, there are leftovers.
